I have fond memories of brandy snaps as a little girl, filling them up with squirty cream and then sneakily squirting a bit more cream in my mouth. So when I saw a recipe in The Great British Bake Off book one evening (one of those evenings where you rifle through all the cupboards for something sweet and all you find are rich tea biscuits), I thought I’d give them a whirl (find the recipe here). I was expecting them to be tricky but they were so easy! You pretty much just mix together equal quantities of melted butter, sugar, syrup and flour, add a dash of ginger and lemon juice and dollop them onto baking parchment. No brandy anywhere to be seen, interestingly enough, but they were very tasty nonetheless!
