Since giving birth two weeks ago I’ve been re-learning everything I thought I wouldn’t forget from last time. I remembered that with breast feeding my appetite is through the ROOF. I literally do not get full. I just want to eat all day. Which means I’m probably going to get really huge!
To that end the other day I found myself raiding the cupboards for something chocolatey to make with Laura. We thought it would be fun to make our own version of a chocolate bar – one of our favourite blogs, www.abeautifulmess.com, recently made their own twixes – and we are both a bit obsessed with Daim bars, so we did a bit of googling. Turns out it is so easy to make your own! Armed with this Nigella community recipe we got straight to it…
Note that this recipe involves boiling hot sugar – we put our tots down for naps before attempting!
275 ml sugar
50 ml golden syrup
150g milk chocolate
Put the almonds in a food processor and blend until they are finely chopped, but not too powdery. Then mix the butter, sugar and syrup in a heavy based saucepan. Bring to a boil and bubble away until the mass is 150°. It takes 10-15 minutes on a fairly high heat. Take the saucepan off the heat. Add the almonds, and cook again until the mass reaches 145-150°.
Pour onto baking parchment paper, spread with a spoon and after a few minutes (when it is not like lava!) cut into bit size pieces.
Melt the chocolate, pour over the pieces and smooth it over. Leave to set.
Then eat. In one go. Quickly, before they wake up….
