Millionaire Shortbread Cake

It was Tia’s birthday at the weekend and we have long had an agreement for years that we would always bake each other a birthday cake. This year I created a millionaire shortbread in a cake form because it’s one of her favourites – a chocolate sponge and buttercream with a shortbread, salted cameral and chocolate ganache filling. I called upon two of the baking greats – Nigella for her salted caramel recipe and Mary Berry for her fail-safe sponge.

You will need:

Sponge

  • 4 eggs
  • 225g caster sugar
  • 225g self-raising flour
  • 2 tsp baking powder
  • 225g butter

Buttercream

  • 90g unsalted butter
  •  175g icing sugar
  • 1 tbsp milk
  • 50g cocoa powder

Chocolate Ganache

  • 250g milk chocolate
  • 235ml double cream

Salted Caramel Sauce

  • 75 unsalted butter 
  • 50light brown sugar 
  • 50caster sugar 
  • 50g golden syrup 
  • 125ml double cream 
  • 1tsp fleur de sel

5 Shortbread Biscuits

1.Preheat the oven to 180C and grease and line your baking tins. I used square ones to keep the cake similar to the look of a millionaire shortbread. Mix the butter, sugar, flour, eggs and baking powder in an electric mixer until fully combined. Separate evenly into the two baking tins and cook for 25 minutes. Leave to cool. salted caramel millionaire shortbread cake 1

2. To make the buttercream, mix the butter in an electric mixer to make it fluffy. Add the icing sugar, cocoa powder and milk and mix slowly until completely combined and chocolate coloured. Spread onto the middle of one of the cakes.

3. Now it’s time to create the millionaire filling. Crumble the shortbread biscuits in a sandwich bag and sprinkle on top of the buttercream. Leave a small amount aside as a topping.

4. To make the salted caramel sauce, melt the butter, sugars and syrup in a pan and let simmer for 3 minutes, stirring occasionally. Then add cream and half a teaspoon of fleur de sel salt and stir until combined. Leave to cool slightly and pour into a squeezy bottle or jug. Add on top of the shortbread.

5. To make the ganache, heat the cream until it starts to boil then add the chocolate and stir until melted. Leave to cool slightly and pour on top of the salted caramel.

6. Add the second sponge on top and cover the top with ganache, salted caramel and a sprinkle of shortbread in the middle. I wanted to keep this as a ‘naked’ cake where you could see the sides so I neatened the edges up with a sharp knife.

This cake is certainly not for those doing a no sugar diet!
