3 Quick Summer Desserts for Kids

Finding healthy desserts and snacks for kids in the summer can be a bit of a challenge.  We have 3 ice cream-obsessed girls who spend their afternoons demanding mini milks! So, we did a bit of research for our latest vlog for Channel Mum and have come up with three quick, healthy desserts for kids: frozen yoghurt fruit bites,  fruit jellies and an amazing totally guilt-free ice cream. Honey, Coconut and Peanut Butter Biscuits

Since Lilah was born two months ago I’ve been trying to eat healthily and shed that sodding baby weight (trying and mostly failing… But it takes time, right?!). But eating healthily over Easter is, frankly, impossible. So I gave up on the diet for 3 days, ate 2 Easter eggs (the average person apparently eats 3 so it could be worse. THREE!) and then decided to make some cookies. I’d seen a really yummy looking recipe here on food blog lacreativitedelafille Which I changed around a bit. These were delicious and healthy*. INGREDIENTS:
3/4 cup Smooth peanut butter
6 tbsp. honey
1 tsp. almond essence
1 cup Plain flour
1 tsp. baking soda
100g softened butter
1/3 cup desiccated coconut

Preheat oven to 180c. Mix the peanut butter, honey and almond essence until smooth. Beat in the butter then gradually mix in the baking soda and flour until you have a smooth dough.

Mini Toffee Apple Pops

‘Tis the season of sparklers, hot chocolate and lovely crunchy toffee apples – all of which I am a big fan. I even make toffee apples outside of the bonfire season (gasp) in the warmer months, which might be a bit weird.

This year my apple tree decided to produce a whopping FIVE apples. Beautiful specimens they were too. So I thought I would try and go miniature on my bonfire treats and make bite-size lollies that give you a little pop of apple. These are really simple to make and pretty (golden) delicious…
